Okay, you know I love baking a good and delicious mouth watering Guilt Free Orange Zest Loaf with Orange Glaze. This orange zest loaf with orange glaze did not disappoint either. I love making different flavored and tasting loafs especially when I'm craving something in particular or seasonal.
I can tell you that this one is definitely a new favorite and I will be making it again very soon because I'm craving it already as I'm talking about it.
This recipe came about from a very specific craving. Come spring I crave a lot of citrus and I had been craving a zesty treat. Loafs have been a favorite to make simply because they're easy, pretty and functional at the end of the day. They're the perfect treat to treat yourself to on a spring morning and/or afternoon snack, just cut a slice and voila, so satisfying.
Ingredients
- 3/4 cups Almond flour
- 1/2 cup Coconut flour
- 1 tsp baking soda
- 1/2 tsp salt (coarse salt preferred)
- 4 eggs
- 1 tsp vanilla
- 1/2 cup fresh squeezed orange juice (about 1 to 2 oranges)
- grated zest of 1 orange
- 1/4 cup maple syrup
- 1/4 of unsalted butter melted or coconut oil melted
Ingredients for Orange Glaze (optional)
- 1 Tbsp maple syrup
- Orange zest
- Orange juice from half of an orange
- 1/4 cup powdered sugar
Baking Instructions
- Preheat oven to 350F. Grease the pan with coconut oil or use parchment paper.
- In large bowl whisk together dry ingredients; flours, baking soda, salt.
- In separate bowl whisk wet ingredients; butter, eggs, vanilla, maple syrup, and orange juice.
- Pour batter into the prepared pan. Bake for 40-50 minutes. Make sure to check readiness by inserting a clean butter knife to center if it comes out clean it's ready.
- Let cool, remove bread loaf from pan and set on a cooling rack or bread board.
- Top with orange glaze.
Glaze Instructions
- Mix all of the ingredients and top your load with it. Optional to poke holes to your loaf for glaze to enhance flavor.
